Looking for an easy weekend meal? Here's a great recipe using some fall favorites from the market:
One Pan Sausage and Fall Vegetables
-1 Spaghetti Squash
-1 pkg. Sausage of your choice
-1 pkg. Mushrooms
-1/2 lb. of Brussels Sprouts
Seasoning of your choice
Directions: Heat oven to 400 degrees Fahrenheit. Cut the Spaghetti Squash in half lengthwise. Coat each side of the spaghetti squash with olive oil and seasoning. (I used lemon pepper seasoning for this recipe). Place the spaghetti squash face down on the pan and roast for 20 minutes.
Meanwhile, chop the remaining ingredients and mix together with olive oil and seasoning. Slice the Brussels Sprouts and Mushrooms in half, and slice the Sausage. Add this mixture to the pan and continue to cook together for an additional 20 mins.
When finished, use a fork to pull the strands from the Spaghetti Squash and arrange on a plated topped with the Sausage, Brussels Sprouts, and Mushroom mixture.
